Dairy Free Eggnog

In a pan bigger than 1 quart, add

6 eggs

1 cup of sugar

1 cup of cornstarch

Whisk together until cornstarch is incorporated

Pour into milk mixture while stirring

1 quart of cashew milk

1 carton of almond milk

Continually stir over medium heat until thickened

If you can stand the calories, whip

1 cup of cream

Add

1/4 cup of sugar as cream thickens

1 drop of nutmeg essential oil or 1 teaspoon of grated nutmeg

1 teaspoon vanilla

Add to eggnog and  chill

Of course you can add the alcohol of your choice, but this eggnog can stand on its own. There is also rum flavoring that can be added if you want the scent and flavor without the alcohol.

  • Yummy for my Tummy!! this eggnog is supurb, I don’t care for the store bought so was hesitant to try—but love it!! My husband Luciano didn’t want to try—-however about x-mas eve he tried and thought I had done something to it—-He loved it!!! thanks Meg—-Darcy
