GENERAL INFORMATION: The name German Chamomile is deceiving as this plant is not distilled in Germany. There are several chamomiles on the market. German chamomile is the only dark blue chamomile. The blue color is caused from azulene and this is not present in the herb, as it is produced during distillation. Matricarin found in the plant changed to chamazulene by the action of steam. Also, German chamomile is an annual, whereas Roman chamomile is a perennial. German chamomile has been confused with blue tansy (tanacetum annucum) which is also called Wild Chamomile, Blue Chamomile, or Atlas Chamomile. Blue Tansy has a much fruitier aroma and can only be mistaken for German Chamomile because of the rich dark blue color that they both have. There is a new blue oil called Blue Cypress ( Callistris intratropica) coming out of Australia with similar properties to Chamomile. The chamomile flower essence refers to angry, tense individuals who need to stand back from everyday stress and find inner calm and serenity. Depending on when the flowers are picked determines the chemical compostion of the oil. When the flowers are immature there is a higher farnesene content. More matured flowers yield more bisabolol which creates antispasmodic and anti-inflammatory properties..
